In order to set product as new, please follow the steps below:

1. Open admin section, go to Catalog -> Manage products.

2. Select product for editing:

   

3. In General tab you will find two fields: Set Product as New from Date and Set Product as New to Date:

   

4. Click "Save" in the right corner.

Your will see the message "The product has been saved.". Reload the store page to see changes.
